December Reflections

 




Christmas Luncheon


The church circle I belong to has a Christmas Luncheon early in December each year. I have only gotten to go to one other of these. This year, I got to attend.


In our part of town there is a municipal golf course with a restaurant on the grounds. I had never been there before.


Due to my gluten-free diet, Hubby and I don’t go out to eat very often. The group went there last year and chose to go again this year. I checked online to see if they still had gluten-free pizzas. They did. I ordered a veggie (G-F) pizza. The six slices were huge. I asked for a to-go box and placed two pieces in. They almost didn’t fit. I had those pieces for my supper.


VERDICT: THAT PIZZA WAS THE BEST PIZZA I HAVE EVER EATEN!


A Surprise


One of my blogging friends sent me a small package in the mail. I tried to take a picture of it and send it to one of my email accounts. It did not work. I hope to figure out how I can get it on my computer to share with you. I really loved this surprise. I took a picture and showed it to ladies at church.


Baking


I found a recipe for French Toast Casserole online. This is a way to use my stale gluten-free bread. I store my bread cubes in two mason jars. When Jim saw that I had bread cubed, he wanted to know when I was going to make it. (it reminds him of bread pudding, he even calls it that.)


I also found a recipe for Blueberry Dump Cake on line (Link Recipe) One night early in December, he asked me when I was going to make it again. I have all the ingredients. I use a gluten-free yellow cake mix. I made one for Thanksgiving. He liked it. (He said it reminded him of cobbler. Another time, He called it Blueberry Strudel.) I planned on making this for Christmas. (I actually got this done.)


In Sunday school one Sunday, My friend Pam asked me to teach for her. Her husband Ken was under the weather again.


Concerns


Each week, I hear of people facing various health issues: cancer, COVID, cardiac problems, digestive diseases, sudden deaths. One friend has a daughter who is on the heart transplant list. The war in Ukraine. The unrest in various parts of the world. That prayer list keeps growing and growing.


December Reading


I had often heard of reading the book of Luke during December. I decided to do it in 2022.


I also have read most of Grace-laced by Ruth Chou Simmons, it was a gift to me. I had started it earlier in the year but got sidetracked. I am journaling scriptures that she has provided references to on each topic.


I got to order a book as part of my Christmas, I ordered They Walked with God, by Max Lucado. I am still reading through it. It is a compilation of stories about Biblical heroes. There are 40 different Biblical heroes in this book.


A friend gave me another book, Why the Nativity by David Jeremiah. He discusses 25 different questions one might have about the birth of Christ.


Lymphedema Treatment Act


Congress passed the Lymphedema Treatment Act on December 23rd. It became part of the end of year Omnibus Bill. Some people have been advocating for Lymphedema compression items to be covered by Medicare for as long as 12 years. These items are rather expensive and the medical people recommend a patient have two new items every six months. One of the physical therapists I had told me about the situation. There is a Facebook group of the advocates. She posted something like “A happy Christmas”. I responded with “AMEN to that!”


The Weather


Our son didn’t get to come home until the 31st due to the frigid temperatures, and the snow. When he was able to travel, there was heavy rain predicted. He was able to make it here and back down to where he lives with no problems. While he was here, we gave him is birthday presents as well as his Christmas gifts and sent him some food back home with him.

  1. Sounds like you had a busy and happy December. I'm so glad you were able to attend the luncheon with your circle group. Sounds like that pizza was a real winner! The other food items all sound good too! Also sounds like you have some interesting books to read. Maybe you can share some excerpts from some of them sometime, although I know Christmas "is over" for now...but still... I am so glad the Lymphedema Treatment Act was finally passed and that it will be a big help to you. I'm glad the Congress did SOMETHING right! LOL. So happy that Roger finally made it home for a belated Christmas and birthday celebration. Just being together is wonderful no matter what the date.
